Prosciutto Meatloaf Muffins with Fig Jam

 These mini prosciutto-wrapped meatloaves are so dang good, that they made my pescatarian sister wiggle her nose and my Jewish aunt asked for seconds and thirds. They’re a great make-ahead, full of flavor AIP entree that’s like a whole meal in one! Meat, veggies, and healthy fats combined into a hand-held meat treat.
